00:04:36When people say there's something in the air, they're referring to the smells and the decorations, and it's a very gical time of the year.
00:04:45I think, uh, people are referring to the goodwill that's in the air.
00:04:49And with the exception of mall parking lots, and the stores themselves, like, I find that, for the holiday season, people have a little more goodwill.
00:05:01We really embrace the spirit of christmas and christmas being the time of giving, and we love donating our time.
00:05:07Happy holidays, everybod we also donate cakes, so at the end of the week, we're taking cakes across the street to the dizz for a big fund-raising tree-lighting party.
00:05:15The christmas spirit is probably similar to an elves' workshop the night before christmas.
00:05:22People are happy, but feverishly working to get finished.
00:05:29I'm piping these snowflakes onto the holiday wedding cake.
00:05:33Some of these snowflakes may be similar, but none of them will be exactly the same.
00:05:40The challenge is trying to make it look classy and stay away from the really gaudysort of tacky christmassy theme.
00:05:47Ben, what holiday would you get married on?
00:05:50It would probably be the fourth of july.
00:05:53That's the coolest one.
00:05:53I don't know what holiday I would pick.
00:05:56I don't really care as long as there's ponies involved.
00:06:00I think my final choice for a holiday wedding will be new years.
00:06:11I'm about to carve the christmas tree.

00:06:21This is the second year that we've made a cake for the golf club at andrews air force base.
00:06:27But this year, they wanted something even bigger and more impressive.
00:06:30This is gonna be almost real christmas tree size.
00:06:35It's gonna be 4 feet tall.
00:06:37(Geof) THE CHRISTMAS TREE Is gonna be surrounded by presents and an elf playing golf.
00:06:44I'm making the little golfer elf.
00:06:48 this is like a tree elf.
00:06:51There are no cake elves that I'm aware of.
00:06:54I've never come into work and had something completely finished for me.
00:06:58It's what I often dream of.
00:07:00("Deck the Halls" playing) We should put stuff on this tree, 'cause it's really, like, it's kind of sad.
00:07:06We gotta dress it up.
00:07:07(Geof) IT WAS A FINE TREE. IT WAS BIG.
00:07:10So it got cut down a bit and then decorated, and then it looked, uh, it looked just fine.
00:07:17I've never put lights on a tree before.
00:07:18Are you serious?

00:07:21the only lights I've put on are on a menorah. oh, yeah. that's right.
00:07:27Look, I found dreidels.
00:07:29You should teach us little games.
00:07:32How to play dreidel? yeah.
00:07:33I think I had the record in sunday school ..
00:07:38Like, 12 dreidels going at the same time.
00:07:41So a dreidel is like a little top, and you play with it with, like, pennies or you play with, like, chocolates or m&m's or something.
00:07:48Dreidels are really cool, because it basically teaches young jewish children how to gamble.
00:07:53Katherine somehow became person in charge of tree decoration.
00:07:57What if we tied this little christmas tree ON TOP OF THE BIG ONE?(laughing) (Duff) THAT'S ABSURD. THAT LOOKS SO COOL.
00:08:04No, it doesn't. that's absurd. yes, it does.
00:08:06Who else has a christmas tree on top of their CHRISTMAS TREE? (laughs) Our tree at the bakery was definitely full of character.
00:08:14I think that the double tree topper was "a"-plus.
00:08:20(laughs) Oh, yeah. what's up?

00:08:31we had to push the tiers back, because the topper is really big, and it wouldn't fit on the top tier.

00:08:41(sighs) The scariest topper.
00:08:46In order to fit it onto the cake, we had to make the top tier smaller and sort of push it back and create a little space in the front for the topper to sit on.
00:08:55I'm gonna deliver this cake tomorrow.
00:08:58It's not far away, so that's good.
00:09:02.. I hope.
00:09:05(Duff) TOTALLY CAME OUT AWESOME, YOU KNOW?
00:09:07 I mean, it was beautiful.
00:09:10You know, I think with a topper that fragile, it really made everybody nervous.
00:09:14(Geof) MANY TIMES, THE CLIENT Will bring the topper to the design appointment and then, uh, you know, we'll take the topper and store it away until the time comes.
00:09:22But there was a little accident.
00:09:24'Twas the night before the wedding, and we're making a cake.
00:09:27And katherine grabbed the topper, and, boy, did it break.

00:09:37And I went to grab the box, in which I didn't think it was, and it tumbled out, and it shattered, and I felt like I was gonna throw up.
00:09:46Usually, in a situation like that, the first thing you gotta do is just stay calm.
00:09:50(Katherine) YOU KNOW, FOUND Where they got it from online, and we called them, and they said it's custom-made, so we can't get another one.
00:09:57Duff's gonna try to repair it, and, I mean, the cake looks good.
00:10:01I think that we'll be able to conceal it.
00:10:03It really, really stinks when this happens, and, you know, the most important part is just getting it done for the day of the wedding.
00:10:10It really doesn't look that bad.
00:10:12Nobody's gonna know. she will know.
00:10:14Yeah, she'll know,but, like, I'm gonna tell her, so it's not like we're gonna surprise her with it.

00:10:25But I'm still gonna call the bride before krine delivers the cake, and, you know, I think it's gonna be okay.

00:15:23You know, it's my job to tell her.
00:15:24I can't get ahold of her, so now katherine's gotta tell her when she delivers the cake.
00:15:29.. upset .. the bride doesn't know yet.
00:15:35.. I don't know.
00:15:38As I was dng the cake to the reception, I knew that no one knew that the sled was broken, and so I was the bearer of bad news.
00:15:50Here we go.
00:15:55(grunts) I knew that I could make it look good enough that no one else would notice, but I was definitely a little nervous.
00:16:02Hot glue doesn't dry clear, so it didn't look like the actual glass.
00:16:05It kind of dries sort of, like, milky.
00:16:07So I told katherine to pipe onroyal icing over top of the glue to make it look like snow.
00:16:12I'm just trying to decide how to make this look nice and not likeg all over it.
00:16:21I'm nervous, 'cause this thing is fragile.
00:16:23I want to be able to work with it, but I'm just so-- so scared of it.
00:16:31This is sparkly sugar crystals.
00:16:34Make it look icy, glassy, but not, like, broken glass.
00:16:41(laughs) .. telling the wedding planners at the reception site to inform about the, uh, the broken sleigh.
00:16:52.. she won't be.
00:16:54He--he can--or she can call duff.
00:16:56He'll talk to her,explain everything, .. it looks beautiful.

00:17:02I really don't think that you can tell anything.
00:17:04They said, you know, "oh,i think she'll be fine with it.
00:17:07" I feel a huge relief.
00:17:10I think that the cake looks great, and no one's gonna notice, and hopefully, the bride will just be happy on her day.

00:17:34I think it's gonna be good.
00:17:35I am making golf balls out of gumballs.
00:17:38Well, first, I'm putting skewers into the gumballs and then wrapping them in fondarific and, uh, making little indents in them.
00:17:47Katie, what do you think of my balls?

00:17:51I'm cutting out these leaves, and that's what's gonna bethe texture for the cake.

00:18:50And we wanted this topper so bad, and it actually looks betterthe way they decided to do it.

00:19:01So after the wedding, I was able to talk to the bride.
00:19:04She was totally cool. she loved it.
00:19:05I'll tell you what, dream client is the client where you call and say, "sorry we broke "your custom-made crystal wedding cake topper.
00:19:12We'll buy you another one," totally " whew.
00:19:18Christmas isn't about glass toppers being broken.
00:19:21It's about goodwill to man and forgiving your clumsy wedding cake makers.
00:19:27("Deck the Halls" playing) My secret santa is also in good shape.
00:19:33Uh, I already have picked out the gift, and it's en route.
00:19:38I have not purchased my secret santa, uh, gift yet.
00:19:44It's a secret to even me, I guess.
00:19:47If you don't come through on your secret santa, it's the--that's bad.

00:20:01All right, so here's a little hanukkah tradition-- eggnog.
00:20:06I really wanted to make eggnog for my staff, because they're always complaining I never cook for them, and so i, you know, every chance, I try to, you know, make something that's not cake.
00:20:14We're gonna beat the yolks and beat the whites, so what I'm gonna do is separate these guys out.
00:20:19You can always get whites into your yolks, but you can't get yolks into your whites.
00:20:24If you get yolks intoyour whites, they won't whip up.
00:20:27You don't want to eat raw eggs, right?
00:20:30This is a cold eggnog.
00:20:33You don't cook this eggnog.
00:20:34What you're doingis you're gonna add this sugar to those yolks, and the sugaris gonna denature the egg yolks.
00:20:40When you cook something, thatmeans you're gonna denature it.
00:20:43I just added the sugar to them.
00:20:46Now those yolks are cooked.
00:20:48Sugar will cook an egg.

00:24:31So at the end of the week, we're gonna donate some cakes to the dizz.
00:24:35They're having a big tree-lighting fund-raiser for the community school.
00:24:39Basically, the community school is really helping kids that are part of our communityhere, so if elaine's gonna have a big tree-lighting party and she's gonna raise money, like, we're gonna go out,and we're gonna help these guys, they're doing really good work.
00:24:50And so the kids will come back, and then they'll go to culinaryschool, and then I'll hire them.
00:24:57This is a present cake for katie's christmas tree.
00:25:01I'm piping snowflakes on it right now to make it look like wrapping paper.
00:25:07I'm decorating one of the presents going under the tree.

00:25:12So I gave sofia, mary, and anna a present, and then they got to decorate it whatever color and style they wanted to.

00:25:34Okay, so right now, what we're doing is poking holes in gumballs,and then we're gonna stick the toothpicksin the gumballs, and the gumballs becomethe lights for the cake.

00:25:47I really like working with the gumballs because they're shiny, and they keep their shape.
00:25:52When I was in middle school, I bought a bunch of gumballs and made necklaces for my friends.

00:26:29(Katie) I THINK IT TURNED OUT REALLY WELL.
00:26:31I wasn't really sure about the golf theme, but I love the golf carts instead of the train going around the cake.
00:26:38(Duff) EVERYBODY REALLY CAME TOGETHER For the christmas tree cake, but, um, we were all out-shined by katie rose's exuberance for christmas, and I think everybody was a little bit scared, because if you stepped onkatie rose's christmas spirit, YOU'D GET YOUR ASS WHIPPED, RIGHT?(laughs) I wouldn't put it that way.

00:30:24Just so you don't think I have creepy pictures of everyone, I went on google image search and typed in "charm city cakes" AND THEN EACH OF YOUR NAMES. (man) WHAT'S That little white face?
00:30:33Oh, and then there wasn't one for tommy, so I very crudely drew one.
00:30:38(laughs) I made an origami icosahedron, and it's made of 30 pieces of origami paper.
00:30:46I made a japanese temari ball and made it into an ornament.
00:30:49It's a ball of yarn I wrapped, then wrapped string over it.
